Kaleberry Ice Cream

This is great way to get kids to eat a dairy free, sugar free ice cream complete with a dark leafy vegetable (similar to our blueberry spinach smoothie). Healthy and clever, as well as delicious!

It’s pretty easy to make, you’ll need to start with these ingredients:

  • 1 cup coconut milk
  • 2 frozen bananas
  • large handful of Kale
  • 2 pitted dates
  • 1 cup frozen blueberries
  • 1 tsp. vanilla extract
  • pinch of himalayan sea salt
  • 3-4 small ice cubes

Put all the ingredients in a high-speed blender, top with some mint and THAT’S IT. You can even mix it up and add strawberries, raspberries, or even blackberries - anything goes as this recipe is incredibly flexible.
