Two-ingredient pancakes

This gluten-free, dairy-free, healthy two ingredient pancake recipe is perfect for  a quick and healthy meal.  Pair it with some bacon hearts and a fruit smoothie for a perfect start of your day.

This is basically all you need:

  • 3 small ripe bananas
  • 3 eggs, lightly beaten

STEP 1: Mash up the bananas.

STEP 2: Whisk the eggs with the banana mash.

STEP 3:  Heat a non-stick frying pan  (or coat the pan with cooking spray) over a low-medium heat.  Pour in 1/3 of a cup of the batter. Cook until bubbles form all over the surface and flip. Cook a further 1-2 minutes and serve.

OPTIONAL: Add fruit, cinnamon, nutella, yogurt, syrup, honey… the possibilities are endless!
